The more you use your knives, the more frequently you’ll have to sharpen them—but you probably didn’t need an instruction manual to tell you that. Rest assured, Schmidt Bros. offers a two-stage, drag-through sharpener (available under Cutlery on our site). To use our two-stage sharpener, place the knife sharpener on a flat sturdy surface. While pressing down slightly with one hand, use your other hand to draw the knife blade with mild pressure towards yourself through the second ceramic rod slot. Repeat this up to six times for dull blades. For very blunt knives, start with the first carbide rod slot to reset the knife edge before using the second slot to refine and hone the knife blade. This should be repeated up to six times per slot.
